What To Do With Leftover Onions? Bake A Traditional French Quiche Lorraine!

Onions can be used for all kinds of dishes: be it for salads, in a casserole, for stir-fry vegetables and and and …! But what should you do best with onions that are being leftovers from shopping and you can’t decide which recipe to use now? 

Our tip: bake a traditional French quiche Lorraine – à la façon française!

I always used to think that baking a quiche is very time-consuming and complicated. But actually, no it isn´t! A friend of mine showed me within 25 short minutes how to bake a delicious, crispy quiche quickly and easily, without putting a lot of effort to it. The most consuming time goes to the baking process (approx. 30 minutes), and the rest is easy-peasy.

During my first studies in Hamburg, I baked a quiche every week for two main reasons. First of all, it just tastes really delicious. There is no way you can deny it. And second of all, you can finish the leftover from your quiche also two days later. This, of course, is ideal for a student! You can cook less and therefore you do not have to spend that much in the kitchen for cooking!

The following recipe is for a quiche pan of 28-30 cm in diameter.

What You Need:

▪ 2 leftover (leek) onions

▪ 4 eggs

▪ 1 quiche dough

▪ 100g diced bacon

▪ 100g grated cheese

▪ 250ml cream (crème fraîche)

▪ 1 teaspoon of salt

▪ 1 teaspoon of pepper

▪ Butter for greasing

Preparation time: 25 min.

Baking time: 30 min.

How To Make It:

1. Preheat the oven to 180 ° C top / bottom heat. Roll out the dough and place in the quiche pan. It is best to briefly grease the quiche pan with butter beforehand. Use a fork to poke several small holes in the dough (this will prevent the quiche from puffing up during baking time later on).

2. Fry the diced bacon in butter. Add the chopped onion slices until the bacon and onions are browned and juicy (5 min.).

3. Mix the eggs and cream (crème fraîche) together with pepper, salt, onions and bacon. Then distribute this filling evenly over the dough.

4. Finally, place the grated cheese on top of the quiche. Finally, the quiche can be put in the preheated oven for about 30 min. Small hint: poke the quiche briefly with a knife before taking it out of the oven in order to make sure that the quiche is crispy enough.
